Preheat barbecue to medium. In a glass bowl, mix all the stuffing ingredients. Set aside. Slice chicken breasts open butterfly style, place between two layers of plastic wrap, and flatten with a meat tenderizer or heavy pan. Spread stuffing in the centre of each breast. Fold and close with toothpicks. Oil and place stuffed chicken breasts on very hot barbecue grill. Cook 6 to 8 minutes each side. Serve.
