Preheat barbecue to medium.In a glass bowl, mix all the stuffing ingredients. Set aside.Slice chicken breasts open butterfly style, place between two layers of plastic wrap, and flatten with a meat tenderizer or heavy pan.Spread stuffing in the centre of each breast. Fold and close with toothpicks.Oil and place stuffed chicken breasts on very hot barbecue grill.Cook 6 to 8 minutes each side. Serve.
