Brown the shallots in the butter. Add the pears or apples, honey, nutmeg and wine. Reduce by half. Blend in the demi-glace. Simmer for 2 minutes. While whisking, blend in the butter, one small cube at a time. Do not allow to boil. Add the lemon juice. Correct the seasoning. Set aside. Cook the ostrich steaks in a frying pan over high heat for 3 to 4 minutes per side. Serve napped with the sauce.

Preparation

Brown the shallots in the butter.

Add the pears or apples, honey, nutmeg and wine. Reduce by half.

Blend in the demi-glace. Simmer for 2 minutes.
