Preheat the oven to 350°F (180°C).
In a pan, place the tournedos on slice of apple and bake for about 30 minutes or until a meat thermometer reads 170°F (77°C).
In a fryng pan, boil the water.
Add the concentrate, celery and ginger finely chopped.
Simmer 5 minutes.
Mix the corn starch in water.
Add to the bouillon and cook 5 minutes.
Add smooth peanut butter; season to taste.
Spoon over tournedos and serve immediately.
