Mix all ingredients together and let stand at least 30 minutes.
Then incorporate one of the three following mixtures to the sauce:
1)1/2 cup (125 mL) minced pitted black olives
2 Tbsp. (30 mL) anchovy paste
2)8 dried tomatoes in oil, drained on paper towels and chopped
Juice and minced zest of 1/2 lemon
3) 1 hot pepper, minced
1/2 red pepper, peeled and minced
These light wines are characterised by their simple fruity aromas, the sensation of freshness they leave, and their unassuming structure. They must be consumed young.
