Preheat oven to 350°F/180°C. In a large bowl, mix all ingredients together, except salmon. Season and set aside. Rinse fish under running water and lay on its side in a lightly oiled baking dish. Stuff fish with pollock mix. Close fish. Season with salt and pepper. Cover with aluminum foil, shiny side oiled. Bake for 45 minutes. Fish is cooked when flesh is pale pink and comes off the bone when touched. Remove skin with a fork before serving.

Preparation
