In a glass bowl, combine all marinade ingredients. Set aside a portion of the marinade.Put the cubes of pork and the vegetables in the rest of the marinade and coat well. Cover and marinate about 30 minutes in the refrigerator.Preheat the barbecue to medium.Remove the cubes of pork and the vegetables from the marinade, drain well and thread on brochettes, alternating the ingredients.Grill the pork brochettes 8 to 10 minutes, turning from time to time.Bring the reserved marinade to a boil and simmer 2 to 3 minutes. Pour over the brochettes.

    extra virgin olive oil
  • 1 cup
    (250 mL)
    beer
  • 1 Tbsp.
    (15 mL)
    fresh chopped rosemary

    cloves garlic, chopped
  • 2 Tbsp.
    (30 mL)
    maple syrup or liquid honey
  • 1 Tbsp.
    (15 mL)
    soy sauce
  • 1
    onion, minced
  • 2 Tbsp.
    (30 mL)
    green peppercorns
