Heat the oil in a pan. Fry the roast quickly on all sides ; season with pepper. Set aside in a cooking pan. Cook the onion at medium heat until transparent. Add the grape juice, apricots, figs and thyme ; bring to a boil. Place around the roast. Cover and bake one hour at 160°C (325°F); when half cooked, turn the meat. Place the roast on a service plate; let rest before serving. Serve the roast with the fruit and onion. Accompany with the sauce.

Preparation
