Preheat oven to 350°F (180°C). Place fillets on a baking sheet or in an ovenproof dish and bake for 8 to 10 minutes. In a frying pan over medium heat, melt butter and cook shallot until soft. Stir in flour then deglaze with white wine. Add bouillon, cranberries, cook over medium heat for 5 to 6 minutes, until thickened. Add shrimp. Add cream and stir. Salt and pepper to taste. Spoon sauce over fillets.
