Bring water to a boil in a skillet and add potatoes. Pre-heat oven to 450°F. After cooking, drain the potatoes. Set aside. Cook onion in a pan over medium heat for about 4 minutes. Add the pancetta. When crisp, add the sliced potatoes. Roast for 5 minutes while stirring regularly. Add rosemary and olive oil. Season with salt and pepper. Place the potato mixture in a baking sheet. Cook for 30 minutes and turn when halfway cooked.
