Preheat oven at 375°F (190°C)
Cook leeks in salted boiling water 4 minutes.
Drain and brown in butter, uncovered until there is no more cooking liquid.
Salt and pepper.
Strip salmon filet.
Lay pastry and place in a deep greased pie mold.
Beat egg and egg yolks with cream, nutmeg, salt and pepper.
Pour preparation over leeks, mix and pour in the pie crust.
Push salmon strips in the mixture.
Cook in oven 45 minutes.
These dry, more delicate wines stand out with their pale colour, simple fruit aromas, and the sensation of freshness their acidity brings forth.
