Pre-heat the oven to 400°F. Begin by preparing the mayonnaise: In a small bowl, whisk the egg yolk with the Dijon mustard and lemon juice. Drizzle the oil in while continuing to whisk. Add the shallot, garlic, dill, and mix. Refrigerate. Add the chips to an airtight bag and crush them with a rolling pin. In a bowl, combine the chips with the cheese. Add some parchment paper to a baking sheet. Place the salmon on the sheet. Spread the homemade mayonnaise on the salmon.
