Preheat oven to 400°F (200°C).
Wash the potatoes and zucchini and cut them into thin slices.
In a pot of boiling salted water, cook the potatoes 5 minutes. Drain
In the middle of 4 large squares of parchment paper, spread a small amount of Boursin.
Add a few overlapping slices of zucchini and potato and cover with the salmon.
Season with salt and pepper and cover the fish with the remaining zucchini and potato slices.
Spread with the remaining Boursin, sprinkle with pink peppercorns, and seal packets.
Bake 10 minutes and serve immediately.
