Heat oil in a large pan over medium heat. Cook leeks and shallots 2 minutes. Add potatoes and red peppers. Season well and cook 8-10 minutes over medium heat. Do not burn leeks; lower heat if necessary. Add basil, season and continue cooking 2-3 minutes. Serve. Recipe from Les Cultures de Chez Nous.

Preparation
