Heat the oil in a frying pan and brown the onion and garlic on medium heat for 5 minutes. Add the beef and cook 10 minutes, stirring with a wooden spoon to crumble the meat well. Pour in the wine, bring to a boil and reduce by half. Add the tomatoes and seasonings, reduce heat and cook gently for 20 minutes. Adjust the seasoning if necessary. Serve with pasta and sprinkle with parmesan shavings.
