Preheat the barbecue to medium heat. Mix stuffing ingredients together in a bowl. Place stuffing in centre of each chicken thigh, fold meat over it and close with a toothpick or a small wooden skewer. Cover and let stand for 15 minutes in the refrigerator. Place chicken thighs on a sheet of oiled aluminium foil and barbecue 6 to 8 minutes per side.
