In a frying pan, heat 2 Tbsp. (30 mL) oil; brown chicken thighs until golden, about 10 minutes. Keep hot.
In the same frying pan, heat remaining oil; brown zucchinis until golden.
Add pesto and chicken broth; simmer 2 minutes.
Add parsley; mix; serve with chicken thighs.
