In a bowl, whisk marinade ingredients together. Set aside 1/3 cup (80 mL). Pour marinade over pork strips in a dish. Refrigerate at least 2 hrs. (at most 12 hrs.) turning the strips over occasionally. Remove meat from marinade and drain. In a wok, heat oil and sauté pork strips. Add vegetables and reserved marinade and cook until heated through. Serve on a bed of brown rice, sprinkle with crushed peanuts and decorate with fresh coriander if you want.
