In a heavy frying pan, heat the oil and butter over medium heat. Place the trout fillets skin side down, and cook until the meat becomes opaque. Do not turn as they cook. Mayonnaise lemon-coriander In a bowl, mix all the ingredients well. Cover and refrigerate until ready to serve. Serve the trout fillets with the mayonnaise, a few sprigs of coriander, and steamed broccoli florets.
