    trout fillets with skin

  • juice of 1 lemon

  • salt and pepper to taste
  • 1 Tbsp.
    (15 mL)
    butter
  • 1 Tbsp.
    (15 mL)
    olive oil
  • 1/4 cup
    (60 mL)
    dried tomato pesto
  • 1/4 cup
    (60 mL)
    basil pesto
  • bean salad:

  • 1 1/2 cups
    (375 mL)
    white beans cooked
  • 1 1/2 cups
    (375 mL)
    kidney beans cooked
  • 2
    scallions minced
  • 2
    celery diced
  • 1/2
    yellow pepper diced
  • 1/3 cup
    (80 mL)
    olive oil
  • 2 Tbsp.
    (30 mL)
    red wine vinegar

  • Salt and pepper to taste
