In a skillet over medium heat, cook vegetables in butter for a few minutes.
In a pan over medium heat, toast the sesame seeds until lightly golden.
In a bowl, mix the ground veal, fried vegetables, sesame seeds, beaten egg and seasonings. Mix well.
Shape the mixture into patties, slightly flattened, and roll in breadcrumbs. In a buttered skillet over medium-high heat, brown patties on both sides. Lower the heat and continue cooking, on medium-low heat, for about 6 minutes. Serve with Bearnaise sauce.
