Brochette Bar: Pile Up on Flavour

A brochette bar is all about fun—especially when you’re entertaining guests in the backyard. Whether they’re marinated, sweet or savoury, brochettes are sure to be a hit. Plus a brochette bar is so easy to set up! Just put together “stations” where everyone can prepare their own brochettes. Perfect for your smallest guests—and big guests, too!
The Protein Station
Be sure to marinate and prepare meat beforehand. Offer guests a selection of proteins, from beef and fish to chicken, seafood, tofu, and even cheese that can be grilled, like halloumi. Cook to perfection:

- Chicken: 10–12 minutes or until juices run clear (may vary depending on thickness of cubes and heat of BBQ).
- Pork: 10 minutes, or until meat is just a bit pink.
- Beef: 7–8 minutes for rare and a few minutes more if you prefer your beef well done.
- Fish and seafood: 5-6 minutes.
To keep your brochettes tender and moist, be sure to turn only once during cooking.
Soak wood or bamboo skewers in water for at least 30 minutes before cooking, so they won’t burn. Be sure to leave space between each piece so your brochettes cook evenly.
The Vitamin Station
Almost any vegetable can be skewered onto a brochette. Just check the harvest calendar and then buy from local farms. Be sure to watch the cooking times so that your veggie of choice stays crisp and crunchy.

- Add some colour: peppers, cherry tomatoes, red onion, eggplant
- Add some flavour: hot peppers, dates, olives
- Add a tropical touch: mango, apple, pineapple
The Tasty Station
Prepare a station for condiments, sauces, spices, and more. You can also cut up lemon and lime wedges for your guests so they can squeeze a little onto their brochettes.

The Sweet Station

Don’t forget dessert brochettes! Try sprinkling cinnamon on pineapple, peaches, melon, and even pears. Plus, add some sweet extras like marshmallows, candy, and chocolate.
