Creamy, fluffy eggs and crisp, salty bacon are the ultimate flavour companions. Here are some ways to whip up something wonderful with this classic combination.


Savour poached eggs with pancetta

For a blissful breakfast, fry pancetta (Italian bacon) until crisp and crumble over soft-poached eggs. Sprinkle fresh tarragon or thyme, season with salt and pepper and serve with buttered toast.


Make a peameal bacon and fried egg sandwich

Layer peameal on a toasted English muffin with an over easy fried egg, a slice of ripe tomato and some baby spinach. Add a dash of honey mustard for great taste!


Whip up a frittata or omelette

Cook your bacon in the microwave between several sheets of paper towels until crispy. At the same time, dip sliced French bread into a mixture of beaten eggs and milk and then fry until golden in a buttered, non-stick pan on medium heat. Serve with bacon, maple syrup, and fresh fruit, such as sliced mangoes. For an exquisite touch, add a dollop of whipped cream on the side.


How to easily poach several eggs at a time

Place a square of plastic wrap in a ramekin or a bowl, with the edges extending over the bowl. Crack an egg into the bowl and grasp the edges of the plastic – twist to secure. Repeat with other eggs and plastic. Set aside. Bring a medium pot of water to a rolling boil and then reduce the heat to simmer. When no more bubbles appear on the surface of the water, add the eggs in their plastic packages. Cook 3-4 minutes. Remove one egg from the water and open the package to test doneness after 3 minutes. Drain eggs on paper towels and serve.


How to serve muffins with a buffet

A tiered cupcake displayer, which arranges the cakes from a few at the top to more at the bottom, is the perfect holder for these muffins. Alternately, use complementary cake stands, placed on top of one another. Arrange in the displayer warm from the oven and serve with honey and jam in small dishes.

Bake your muffins ahead of time and freeze. Take them out the morning of your brunch and defrost at room temperature. Then heat them up in the oven at 250F for about 20 minutes before serving.
