Recipe ingredients
- 1 beef heart
- ½ cup (125 mL) peanut oil*
- 1½ cups (375 mL) frozen mixed Polynesian vegetables*
- 1 tsp. (5 mL) fresh ginger
- 1 tsp. (5 mL) chopped lemon grass leaf
- 1 lime, juiced
- Fresh cayenne pepper, chopped to taste
- Salt and white pepper to taste
Preparation
Remove the fat and membranes around the heart and cut into cubes.
In a large frying pan or wok, stir-fry the cubes in oil over high heat.
Add the remaining ingredients and continue cooking for 3 to 5 minutes. Season.
Suggestion
Wash and soak the beef heart in cold water with 2 Tbsp. (15 mL) of vinegar for 4 cups (1 L) of water to soften and clean it.
If you heat the pan before pouring in the oil, the hot pan will instantly heat the oil and prevent it from ‘burning’.
Accompaniements: Hot peppers, Chinese cabbage, brown basmati rice.
Medium-bodied red wine.
