Mint-glazed Grilled New Zealand Lamb Chops

Recipe ingredients
- 1/4 cup (60 mL) olive oil*
- 1 tsp. (5 mL) chopped fresh rosemary
- 12 New Zealand lamb chops
- Glaze
- 1/3 cup (80 mL) apple jelly*
- 1 Tbsp. (15 mL) sugar
- 1/4 cup (60 mL) fresh-squeezed lemon juice
- 3 Tbsp. (45 mL) water
- 1/4 cup (60 mL) chopped fresh mint
Preparation
In a large dish, combine oil and rosemary. Add chops, turning to coat evenly.
Marinate in the refrigerator for 1 or 2 hours.
In a small pan, dissolve jelly and sugar with lemon juice and water.
Remove from heat as soon as jelly is completely dissolved. Add chopped mint.
Preheat barbecue to medium-high.
Drain chops and grill 3-5 minutes per side to desired degree of doneness.
Turn chops only once during cooking.
When chops are almost done, brush with mint sauce.
Continue cooking until well glazed.
