  QUICK CUCUMBER KIMCHI

Refrigerate 1 hour
before serving
Lebanese cucumbers,
grated
500 ml (2 cups)
Carrot, grated
200 ml (3.5 oz)
Soya sauce
50 ml (1/4 cup)
Sugar
50 ml (1/4 cup)
Fresh ginger, grated
30 ml (2 tbsp)
Chili powder
15 ml (1 tbsp)
Fish sauce
15 ml (1 tbsp)
3 Garlic cloves,
chopped
Salt 10 ml (2 tsp)

  HOT PINEAPPLE KETCHUP

Simmer 1 hour
then mash
Fresh pineapple, sliced
then grilled
500 ml (2 cups)
Brown sugar
200 ml (7 oz)
White onion, diced
200 ml (7 oz)
Cider vinegar
50 ml (1/4 cup)
Tomato paste
15 ml (1 tbsp)
Sriracha
15 ml (1 tbsp)
1 Garlic clove,
chopped

  HARISSA MAYO

Refrigerate 1 hour
before serving
Mayonnaise
300 ml (10 oz)
Plain yogurt
150 ml (5 oz)
Green onions, chopped
30 ml (2 tbsp)
Harissa
30 ml (2 tbsp)
1 Garlic clove,
chopped
Smoked paprika
15 ml (1 tbsp)
Salt and pepper to taste
