In a glass bowl, mix the horsemeat tournedos, garlic and 2 Tbsp. (30 mL) of the oil. In a frying pan over medium-high heat, heat the remaining oil. Lightly sear the tournedos on each side. As soon as the meat has browned, spread out the apple slices on top, then pour in the balsamic vinegar and apple juice. Sprinkle on the cinnamon, salt and pepper. Cover. As soon as the sauce starts boiling, lower the heat to medium-low and cook for 5 to 6 minutes. Remove from the heat and let rest uncovered for 2 to 3 minutes before serving.
